THE RECIPE:
Ingredients:
1 bunch of Bok Choy
1 bunch of spinach
Half of a whole broccoli
3 bunches of saroon da saag

Wash all vegetables well as shown in video. In pressure cooker put in about a cup and a half of water, (not much water) and about 3 teaspoons of salt and leave the lid open, and on the heat. Chop spinach, saag, broccoli, and bok choy small as shown in video and add to the pressure cooker as you go. Once all vegetables are in the pressure cooker, stir with the coatna and then flip to the other end to press the saag down into the water. Leave the coatna in the saag whilst you prepare rest.

Then, peel and chop one whole clove of garlic, one handful of ginger, and 5 green chillis. Put all into the kundi sorta, and hand grind them until small as shown in video. Add this to the saag along with a little more water, and put on the pressure cooker and leave for around 30 minutes.

Whilst this is cooking chop and peel a half clove of garlic, 1 onion, and a thumb size of ginger. Leave garlic separate to onion and ginger on chopping board. Fry garlic first and then when brown add onion and ginger. After this has browned chop 1 tomato and add into tarka along with 1 teaspoon of salt. Add enough oil to cover the bottom of the pan whilst this fries.

Once the saag has completed 30 minutes on the stove, leave to sit and open. Add 2 large tablespoons of cornflour into the saag and stir and mash well on the floor (as shown in video). Once this is of good, thick consistency, put back on the heat without a lid for 5 or 10 minutes whilst tarka cooks, and until the saag starts to bubble. Once this happens, slowly stir the saag into the tarka little by little to ensure the flavours are throughout the entire dish, and add any water, salt, or chillis according to taste.
