Calories: Both are calorie dense. Due to amount of oil and nowadays, insane quantities of obstacles and sheer quantity

Carbohydrates: both are high in good quality starchy carbs.

Fiber: eru is very high in fiber. Dietary fiber decreases the absorption of cholesterol from the gut in addition to delaying the digestion and conversion of starch to simple sugars, an important factor in the management of diabetes.

Fermented foods: water fufu is fermented. Fermentation is the breakdown of carbs like starch and sugar by bacteria and yeast and an ancient technique of preserving food. Fermented foods have been associated with several positive health effects, including improved digestive health, stronger immunity, and increased availability of beneficial nutrients.

#Eru Soup RECIPE

Do not cook Eru without crayfish. In fact, NEVER cook eru without crayfish. Crayfish makes the dish.

Do use hot habanero peppers. If you do not eat spicy, sorry, you cannot eat eru.


2 pounds meat (beef, cow skin)
1 pound smoked fish
2 cups palm oil
1 cup Ground crayfish
5-6 cups Dried eru
2 pounds water leaves
4 Maggi cube
Salt to taste
Habanero peppers to taste

- [ ] Soak the dried Eru leaves in water for 1-2 hrs. or overnight in fridge.
- [ ] Cut the beef and cow skin in bite size chunks. Season and cook until tender. Make sure you have at least 2 to 3 cups of stock.
- [ ] Add the waterleaves (or spinach) to a big pot. Let it cook on medium heat (approximately 10 minutes) until tender.
- [ ] Add Eru leaves and palm oil.
- [ ] Stir thoroughly making sure all the contents in the pot blend together.
- [ ] Add crayfish and Maggi and pepper and stir.
- [ ] Simmer for another 10 minutes, add stock /water as needed.
- [ ] Taste and adjust seasoning.
- [ ] The dish is ready when it start to “burn” a little.

How can you make dishes healthier?

- Eru: replace waterfufu with garri or veggie fufu. Cutback on amount or oil used.
- Achu: always eat with lots of veggies (garden eggs and njama njama njama). Poriton control on the achu.
