why tipping is MORE STRESSFUL than I thought

SO, I know how to tip at restaurants... but other than that, I'm lost. Everyone has different feelings about tipping (tipping should be banned, you should always tip 20% no matter what, etc.) so I never know what the "right answer" is. Honestly, I just want everyone to be paid fairly and I ALSO don't want to offend anybody.
