The Pioneer Woman. Over the years, I have tweaked this recipe for speed and personal preference.
Recipe:
Tweaks:
1. Warm quart of whole milk in the microwave for 2:30, stir, check temp, add yeast and sugar.
2. After the yeast blooms, add all ingredients to Kitchenaid Mixer and let her rip.
3. Once the dough ball comes together, lightly spray the top of the dough with Pam and cover the whole mixer with a large kitchen towel. Let it rise.
4. Punch it down and roll it out.... you'll need about 5ft of countertop space if you do it in one go.
5. Once stick of melted butter is perfect for the whole batch (recipe calls for more, I think it's too much)
5. Sprinkle the rolled dough with brown sugar. Sprinkle again with cinnamon.
6. Roll them up, cut, let rise, and bake. I bake mine in a convection oven for 14 min @ 350 degrees.
7. For the icing, I leave out the coffee. Again, this is personal preference. I make mine with one stick of melted butter, 1/4 cup maple syrup, 5 heaping cups of powdered sugar, and milk.
Recipe yields 6 pas of rolls.
